Spiced Cider

Have just tried a bottle of Bulmer's Spiced Apple and Honey cider.

Ok, its a bit sweet, fizzy and soft but I see where they are going. So I get this idea for a Winter Cider:

Good craft cider from the autumn applkes or Lidl AJ, spiced up with Cinnamon, Nutmeg, Cloves, Orange peel. Fermented out very dry. Then just before drinking sweeten up with Honey and either carbonate in a keg or allow a careful re-ferment and drink before honey ferments all the way out!
