I don't get it - for either bar, but especially Bison. People actively asking them to stock craft beer (preferably Irish), and they go... "Eh.. nah. We're whiskey specialists. And BBQ, obviously."
You don't have to "specialise" in beer to get one or two craft taps (or even bottles) in. There may be a whiskey equivalent of Beoir, but I've not come across them. And I know nobody who says "Let's go out for a few whiskies." Let alone "This particular whiskey would go great with [i:6a9ml0tw]this [/i:6a9ml0tw]type of brisket."
